What do I do?

    I grew up going to bed with the lights switched off.

    In fact, at night, one way to know if anyone was awake was to check if lights were on.

    My wife on the other hand, grew up going to bed with the lights switched on.

    On our wedding night, I had to agree to her terms, because it was "our wedding night".

    However, ever since then, I've not had a good night rest because of this.

    What do I do?

    Ouch, this is not nice.
    But hey, seriously, why didnt you talk about this before marriage? Very little, yet so important!

    Well my advice is for now, u let her sleep, then you switch off the light. She should agree to that if she cares for you too.

    you can get a bed side lamp with a bulb that has really low voltage power. That way, the room isn't too dark or too bright for either of you.
