We've been friends for a while but I didn't ask her out until I was sure. She gave me a yes, but her parents said NO, for only God knows why. Now I seem a little confused about the whole thing because I wouldn't want to begin a relationship her parents approval.

I want to believe that your 'assurance' came from God. If so, fear not, keep the relationship/friendship.
Both of you continue in prayers concerning her parents. With time the secrets and reasons will be revealed and God will settle you both.
